  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 cup water
  • Salt to taste

Let's cook!

First, marinate the chicken with all the ingredients listed above. You can leave it overnight in the fridge to let the flavours infuse, but if you're pressed for time, just marinate it for at least an hour.

Next, heat up the cooking oil in a pan over medium heat. Add in the onions, garlic and ginger and sauté until fragrant and golden brown. Then, add in the chopped tomatoes and cook until they turn soft and mushy. Add in the chilli powder, turmeric powder, cumin powder, coriander powder and garam masala. Mix well and cook for a few minutes.

Now, add in the marinated chicken pieces and stir them in with the tomato and spice mixture. Cook the chicken for a few minutes until they start to brown slightly.

Add water to the pan and mix well. Bring the gravy to a boil and then reduce the heat to low. Cover the pan and cook for around 20-25 minutes, or until the chicken is cooked through and the gravy thickens. Add salt to taste.

Time to serve!

Transfer the Ayam Masak Merah into a serving dish and garnish with some freshly chopped coriander leaves. Serve hot with some fluffy white rice and a side of cucumber and onion slices.
