Instructions:

  1. Blanch the yellow noodles in boiling water for 1-2 minutes. Drain and set aside.
  2. Heat the cooking oil in a wok or large frying pan over medium-high heat. Saute the minced garlic until fragrant.
  3. Add the sliced onion and red chili peppers. Stir-fry until the onion is translucent and the chili peppers are fragrant.
  4. Add the tomato sauce, chili powder, and soy sauce. Stir-fry for a minute or until the sauce is evenly distributed.
  5. Add the blanched yellow noodles and stir-fry for 2-3 minutes until the noodles are well-coated in the sauce.
  6. Add the sugar and lemon juice. Stir-fry for another minute.
  7. Push the noodles to one side of the wok or frying pan. Add a little more oil if necessary and pour the beaten eggs into the empty space. Scramble the eggs with a spatula until they are just cooked.
  8. Stir the eggs into the noodles. Add the sliced fried tofu and choy sum. Stir-fry for 2-3 minutes until everything is well combined and heated through.
  9. Add salt to taste. Serve hot.
