In another pan, heat up some oil and sauté the shallots, garlic, lemongrass, and kaffir lime leaves until fragrant.

Add the green bird's eye chillies and young banana chunks to the pan and mix well. Cook for 1-2 minutes.

Add the mixture to the large pot with the catfish and coconut milk. Stir well and bring to a simmer. Let it cook for another 5-7 minutes.

Lastly, add salt to taste and serve hot with steamed rice. Yum!
